Vegan Vanilla Ice Cream recipe

I’ve created an incredibly easy and ridiculously delicious dairy-free ice cream recipe. The best part? No ice cream maker needed! This 5-ingredient vanilla ice cream is so simple that even beginners can make it - whether using an ice cream maker or just your freezer.
And if you're feeling creative, I’ve experimented with different flavors based on this vanilla base, and they’ve turned out amazing.

Ingredients:
2 cans full-fat coconut milk
1 TB vanilla extract (use other flavored extracts for diff flavors!)
1/2 cup cashews (soaked in boiling water for 10 min, then strain)
1/3 cup maple syrup
4 Dates, pitted
Instructions:
Blend all ingredients in a blender for 1 minute, until perfectly smooth.
Pour into a large bowl and stick in fridge for 4 hours.
Once cooled, add bowl to freezer. Stir every hour for 4 hours until thick like ice cream. (If you have an ice cream maker, instead pour liquid into it to make the ice cream that way.)
Optional: Add chunks or toppings into ice cream maker for the last few turns (when it's almost done). If stirring by hand, just add in toppings at the end to stir in.
