Decently healthy and packed with big flavor, I am sure you're going to love this pie. It's one of my go-to favorites.
Ingredients:
1 9-inch pie crust or use my homemade vegan crust recipe.
Filling:
5 cups sliced apples (I also like to dice some of them too!)
1/2 cup coconut sugar
2 TB all-purpose flour
1/2 lemon, juiced
1 TB cinnamon
Crumble:
1/2 cup coconut sugar
3/4 cup oat flour
3/4 cup pecans (or walnuts) chopped
1/3 cup coconut oil (melted)
Instructions:
Preheat oven to 400F.
Prepare the crust and add to a greased (coconut oil) pie pan. Pinch the edges so they don't slide down during baking.
Peel and then slice approx 5 apples for 5 cups. I also like to dice some of them. Add them to a medium sized mixing bowl.
Add the rest of the filling ingredients and mix until well coated.
Add the apple pie filling to the crust.
In a separate small mixing bowl add all the crumble ingredients and mix until crumbly.
Add the crumble to the top of the apple pie.
Bake pie for 40-50 minutes until golden. Let rest for 15 minutes before slicing.
