Vegan Cinnamon Rolls recipe

Cinnamon Rolls are a Christmas morning tradition in our house, so I've been making them for years! They are so good and you can freeze them and eat them throughout the Holiday season! They are super easy to make vegan too, so enjoy!


Ingredients:

Dough:

2 TB vegan butter

1 cup plant milk

1 packet instant yeast (2 1/4 tsp)

1 TB sugar

1/4 tsp salt

3 cups all-purpose flour


Filling:

3 TB vegan butter

1/4 cup sugar

1 TB cinnamon


Frosting:

1 cup powdered sugar

2 TB plant milk

Instructions:

1. Combine vegan butter & plant milk in a bowl.

Warm in a microwave until melted. Make sure it's not too hot or it will kill the yeast.

2. Add the butter mixture to a large bowl then add the yeast to this mixture and let sit for 10 minutes.

3. Add the sugar & salt, then stir. Add 1/2 cup flour at a time, stirring together as you go.

4. Once the ball is elastic and slightly sticky take the dough and knead it a few times on a lightly floured surface.

5. Get a new large bowl and coat the inside with olive oil, then add the dough ball to the bowl, cover with a towel, and set in a warm place.

6. Let rise for 1 hour.

7. Take the dough onto a lightly floured surface and use rolling pin the create a large, thin rectangle.

8. Melt down the 'filling' vegan butter and brush it on the rectangle. Then combine sugar & cinnamon in a bowl then spread it out evenly on the dough rectangle.

9. Roll tight into a long tube. Then take floss and cut 2" size pieces. Add pieces into a buttered 8X8 pan.

10. Cover with a towel and let rise in a warm place for 15 minutes. Preheat oven to 350F.

11. Bake cinnamon rolls 25-30 minutes or until tops are browned.

12. Mix the frosting in a bowl and add on top of the rolls once they've cooled slightly.
